How Carla Hall makes healthy to eat happy

Question: Carla, How has your approach to eating developed as you have navigated in different life stages?

Carla Hall: As I have grown older, I have become more intentional with how I eat. I have always loved food, but now I look at it through the lens of long life, endurance and brain health. When I was younger, indulgent meals were just that, fun and filling. But now I wonder how the food serves me and my health.

I still enjoy Comfort Foods, but I’ve learned to give them a functional VRI. Instead of a beef burger, I go to Turkey or a Veggie burger on a whole grain bowl with lots of vegetables. And instead of sugary milkshakes, I make a smoothie with Greek yogurt, berries, spinach and protein powder. It’s about finding joy in nourishment and making smart swaps that still feel satisfactory.

Question: How does a typical eating day look for you now?

Carla Hall: My days are busy so I eat to fuel up. I usually go to six smaller meals all day to keep my energy up, especially when I’m in production mode. I might start with tasty oats made with chia seeds, sunflower milk and nuts – I love absolutely oats! Lunch could be a whole grain bowl with quinoa, toasted vegetables and turkey breast. I snack on hummus and carrots, especially between dessert tastings. Dinner may be something fast from the air fry or barbecue, paired with whole grains. At night, especially if I work out, I get a protein -roast to help with improvement.

Question: How are you approaching meal planning and preparation?

Carla Hall: I focus on simplicity and taste. Using whole ingredients allows me to control salt, sugar and fat content in my meals. I improve dishes with fresh herbs and citrus to reduce sodium without sacrificing flavor. This approach makes preparation of meals both healthy and entertaining – and MyFitnessPal’s new meal planner really helps. It’s been a great addition to my cooking philosophy. Meal planner helps me organize my meals a week and make sure I get a good balance between nutrients while still keeping things exciting in the kitchen.

Question: Have you made specific dietary adjustments to support your health that you have aged?

Carla Hall: Absolutely. I have become more focused on getting enough protein and fiber, and I have begun to be aware of how food affects my energy, mood and digestion. Learning I carry a gene associated with dementia really changed my perspective. It made me more aware of my general well -being, including thinking more intentionally on foods that can help support general brain health. I am also aware of parts and timing. It’s about supporting my body for a long time – I plan to live to 104!

Question: What advice would you give to others who want to adapt their eating habits to better health?

Carla Hall: Start by listening to your body. Don’t be afraid to develop your habits as your needs change. Food is fuel and Joy – it’s not/or. Use spices, herbs and citrus to keep meals exciting without relying on sugar or salt. And don’t forget to give yourself grace. Tracking my meals with MyFitnessPal has really opened my eyes to what my body needs.

Question: How has menopause affected your dietary choices and general nutrition?

Carla Hall: Menopause caused significant changes in my body, including digestive problems and shifts in energy levels. To control these, I focused on incorporating nutrient -tight foods such as leafy vegetables, whole grains and lean proteins. I was also aware of hydration and included foods rich in calcium and magnesium to support bone health.

Question: How do you ensure variation and excitement in your meals while focusing on health?

Carla Hall: Spices, herbs and seasonal ingredients are my go-toos. I love to play with flavors to keep things interesting without relying on added sugar or fat. And I often combine the familiar with the unexpected – it’s a great way to ease people to try new things.

I have used MyFitnessPal since before the pandemic – back when I didn’t even know what a macronutrient was – and it helped me to focus on what my body needs. That is why I am thrilled to work with MyFitnessPal on a recipe collection for their meal planner.

In my experience as a chef, this is one of the most practical tools out there. With meal planner, you can now plan your meals for the week based on your nutritional goals and dietary preferences, and it even generates a grocery list that makes shopping easy. Whether you are an experienced chef or just starting, it is a great way to enjoy different, healthy meals without spending hours finding out.

For me, it’s all about balancing creativity with nutrition – and this tool helps to make this balance feel achievable to everyone.

Question: What role does mindfulness play in your eating habits?

Carla Hall: Mindfulness is key. I am very aware of how food makes me feel – both physically and emotionally. This attention helps me to make choices that are consistent with my health goals while keeping the joy of eating.

Like 61, I have learned that it is not just about counting calories; It’s about focusing on the nutrients that our bodies really need as we get older. Calcium for strong bones, protein to maintain muscle mass, fiber for digestive health and potassium for heart health. That’s why tracking my food intake with MyFitnessPal has been so attending.

For me, mindfulness is about honesty – being your own spokesman and really understanding what your body needs. Tracking my intake helps me stay intentionally.

It’s about balance and setting. For me, tracking has been a useful tool – not for occupation but for attention. Food is meant to be enjoyed, and with some attention we can give our bodies the love and nutrition they deserve.
