Served with an antioxidant-rich berry sauce, this French toast recipe is as decadent as it is nutrient-dense. Baking all the French toast at once means you can serve the whole family breakfast at the same time, without standing at the stove finishing portions while everyone else digs in.
Carbohydrate, protein and total calories in this breakfast depend on the bread you use. If you’re looking to cut calories or carbs, you can choose a “thin-sliced” loaf, but if you’re trying to get more protein or have a hearty breakfast, get a standard-sized whole-wheat loaf. Sprouted bread also tends to have more protein than regular bread. Pair this French toast with a couple of scrambled eggs or Greek yogurt for a complete breakfast!

Sheet Pan French Toast with mixed berry sauce
Serves: 4 | Serving size: 2 slices of bread, 5 tbsp/74 ml sauce
Ingredients
- 8 slices of sprouted whole grain sandwich bread
- 4 large eggs
- 1/3 cup (83 mL) orange juice, freshly squeezed, divided
- 1 tablespoon orange peel, finely grated
- 2 tsp vanilla extract
- 1/2 teaspoon nutmeg, freshly grated
- 1 cup (244 ml) skim milk or plant-based milk of your choice
- 1 cup (150 g) blueberries
- 1 cup (150 g) strawberries, sliced
Directions
- Preheat oven to 425°F (230ºC). Coat a 13 x 18 inch (33 x 46 cm) baking dish generously with cooking spray. Arrange bread slices close together on the pan in a single layer.
- In a medium bowl, whisk the eggs, 1/4 cup (59 mL) orange juice, orange zest, vanilla extract, and nutmeg until fully combined.
- Add the milk and whisk to combine.
- Slowly pour the egg mixture evenly over the bread slices. Tilt the pan around so the bread soaks up the egg mixture. Bake in the bottom third of the oven until browned on the bottom, 10 minutes.
- Meanwhile, make the berry sauce: Combine the berries and remaining orange juice in a medium saucepan and simmer over medium heat, stirring occasionally, until the fruit begins to break down and the juice has reduced slightly, 2 minutes. Reduce heat to low and keep warm.
- Move the sheet pan to the top rack of the oven (6 inches/15 cm) from the broiler element. Switch oven to broil and broil on high until bread is risen and browned on top, 1 1/2-2 minutes.
- Serve the French toast with the sauce and enjoy!
