These little pies are a showstopper, with a crispy golden nest of phyllo filled with tender cinnamon-laced apples and topped with a dollop of vanilla yogurt.
Thaw the phyllo dough in the fridge overnight, so it becomes more flexible to work with. And if you want to cut back on the sugar, use plain Greek yogurt and add a dash of vanilla extract.

Apple Tartlets in Phyllo Nests
Ingredients
- 5 full size sheets of phyllo dough, thawed
- Cooking spray
- 6 teaspoons (25 g) sugar
- 3 medium-sized apples
- 4 tablespoons (60 g) water
- 1/2 teaspoon ground cinnamon
- 1 tablespoon maple syrup
- 1 5.3 oz. (150g) container 0% vanilla Greek yogurt
Directions
Thaw the filo overnight in the fridge.
Preheat oven to 375ºF (190ºC). Roll out the filo, take out 5 sheets and roll them into a cylinder and set aside. Roll up the remaining filo, wrap tightly and freeze again. Using a sharp chef’s knife, cut the reserved sheets into thin slices, less than 1/4-in wide. Divide the pile into 6 portions. Spray each stack of phyllo for 2 seconds with cooking spray and use your fingers to gently lift and fan the strips.
Coat a sheet pan with cooking spray, then shape each mound into a 4- to 5-inch-wide nest. Form a raised edge and tuck any stray strips under the edges. Sprinkle each nest with 1 teaspoon of sugar. Bake for 15 minutes or until golden and crispy.
Peel, quarter vertically, and thinly slice the apples, then cut the slices into 1/2-inch pieces. You should have about 4 1/2 cups of chopped apples. In a large saute pan, add 1 tablespoon of water and turn the heat to high. Add the apples and stir until the water bubbles, then reduce to medium. Sprinkle with cinnamon. Stir regularly and add water 1 tablespoon at a time as the pan becomes dry. Cook for 5 minutes until the apples are soft. Drizzle in the maple syrup and stir for about 2 minutes until the maple covers the apples. Remove from heat and cool. You will be left with about 2 cups.
Add â…“ cup apple filling to each nest just before serving. Garnish each tartlet with a heaping tablespoon of yogurt.
